Ok today I am not going to go a rant, a few people have asked me for some recipes. So today I am going to share with you – not quite my signature dish (that is satay chicken) but a super easy and ultra versatile mince recipe. By making a few small variations it can become meat balls, meatloaf, burgers and even a kick butt spag-bol sauce. FYI clearly will enter myself in Masterchef next year : )
So what you need:
500g of Mince Beef or even Lamb (lamb meatballs rock)
½ an Onion chopped
1 Carrot chopped or grated
1 Zucchini chopped or grated
1 – 2 Cloves of Garlic crushed or finely chopped
Chilli, Salt and Pepper to your taste
Now for Meatballs / Meatloaf / Burgers
½ a cup of Rice Crumbs (can use bread if you eat it)
Some grated cheese tasty or parmesan
Then any herbs you like and a few dashes of sauces Soy, Tomato, BBQ, Tabasco (really your call)
Throw it all in a big bowl and mix it together! If you think the mixture is a bit to soggy you may want to add more Rice crumbs. You can then either make meatballs or put the entire contents in baking dish (cake tin?) and make a meatloaf. If I make meatballs I pour an Organic Pasta sauce (love the Basil and Garlic one) over the top.
Put it in the oven 180+ until cooked normally round an hour or so – Meatloaf a little longer.
1 – 2 Celery Stalks chopped
1 Jar of Organic Pasta Sauce Tomato and Basil
Heat Olive Oil In a med / large pot. When the oil is hot enough throw in onion, garlic and chilli – allow that to cook for a min or two. Then add the other vegetables and give them a minute or two – before you add your mince. Ensure there is no raw (still red / pink) meat left then add in the Pasta sauce and cup of water (I fill the jar up and tip that in) then turn down the heat stir and allow to simmer for a min of 30 minutes.
Honestly it is really simple and you can add your own little tweaks and twists and make it your own.
